Hello, Friends Welcome to Viktar's Kitchen today I'm gonna show you how to make Zarda Pulav or Sweet Rice. It makes a perfect dessert for breakfast, lunch, or dinner recipe during festivals.

𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧:
****𝐆𝐞𝐭𝐭𝐢𝐧𝐠 𝐑𝐞𝐚𝐝𝐲***
1. Take 2 cups Basmati rice.
2. Take 1/4 tsp orange-red food color in a small bowl mix with little water.
3. Take 25 gms cashews, 25 gms almonds, cut a few in halves and a few in thin slices.
4. Take 1 table-spoon cardamoms powder,
5. Take Grated Sliced Coconut
6 Take 25 gms Raisin
7 Take 25 gms chironji Seeds
8. Take 1/2 cup milk, add 10 to 15 saffron strands.
9. Take 1 Bowl of Powdered Sugar.
****𝐌𝐚𝐤𝐢𝐧𝐠******
Wash the rice with clean water and soak for one hour
Take a large vessel with almost 1.5 liters of water.
Boil the water and add 1 Table Spoon of refined oil. Also, add the soaked rice to the boiling. water.
Stir the rice at regular intervals, Press and check one grain of rice to check if it is cooked well.
Strain the rice from the water.
We have placed the strainer over a bowl, then pour the rice over it.
Take a heavy-based vessel or wok. Turn on the flame and let it heat. Add ghee
Take 2 Tbsp of Lukewarm milk and add 20 to 25 Saffron Strands and 1 pinch edible color and mix well
Take a Non-Stick Pan and Grease with desi ghee
And spread a layer of rice in the non - stick pan.
Add 1-2 Tablespoon Powder sugar and sprinkle cardamom powder
Add some chironji seeds
Add some raisins
chopped cashews and almonds.
Now add a little bit of ghee to it
Spread the second layer of rice and repeat the same process
Spread 1/3 bowl of powdered sugar. You can add sugar according to taste.
Also spread the third layer of rice, raisin, sugar, powder, ghee almonds, cashews, and cardamom powder.
In this way, we have applied 3 layers of rice, raisin, sugar, powder, ghee almonds, cashews grated coconut slice, and cardamom powder
Make small holes in the rice layers with the help of a backside of a spoon.
Add some drops of saffron milk to each hole. This will give a beautiful yellow color to some of the rice.
Now heat the pan on low flame and cover it with the lid and cook it for 4-5 minutes till sugar melts in the rice.
Now open the lid and stir rice slightly

Take a heavy base vessel if you are not using a Non-Stick Pan. This will prevent the rice from burning.
I am adding a few drops of edible orange color. This will make Zarda Pulav more attractive and beautiful.
If you prefer shaded rice always add dark color at the end.
Zarda Pulav is ready. Transfer to a serving dish and garnish with Dry Fruits.
