Hello everyone! I hope you're having a wonderful start to the new year!
This was a spontaneous filming session because I had some leftover ingredients, but I’m proud of myself for finishing a decent tart without proper planning. hehe.
My teaching job at the college just started, so I’ve been a bit busy, but I love creating for Valentine’s Day. I’ll do my best to make some desserts for the occasion and hopefully post them by next week.

Vanilla salted caramel tart recipe
Pate sucre (Tart shell dough)
Unsalted butter 125g
Powdered sugar 60g
1/2 Egg 25g
Salt 0.5g (Pinch of salt)
All-purpose flour 190g
Vanilla mousse
Milk 80g
1/2 Vanilla bean
1 Gelatin sheet 2g
White Chocolate 105g
Heavy cream 35% 110g
Almond cream
Unsalted butter 50
Powdered sugar 45g
Egg 30
Almond powder 45g
Cake flour 5g
White chocolate spray
White chocolate 15g
Cocoa butter 10g
White cocoa butter coloring 5g
*When you spray, the mousse should be frozen for velvet effect.
Caramel sauce
Brown sugar 50g
Unsalted butter 27g
Heavy cream 65g *Cream should be warm otherwise caramel might explode!
Corn syrup 5g
Salt 0.5g (Pinch of salt)
