Mexican Street Corn:
Combine all ingredients in a bowl then refrigerate until time to eat.
4 ears grilled corn
1 diced bell pepper
1 diced jalapeno
3 cloves minced garlic
1 bunch cilantro
1/2 cup cotija cheese
3 TBSP may
1 tsp chili powder
1 tsp salt
juice of 1 lime
Use on top of meat in street tacos and top with chipotle lime ranch
