Giraffe Roll Cake
Ingredients:
Cakeflour 60 g
Caster sugar (2 bowls) 10g + 70 g
Cocoa powder 20 g
Corn oil 50 g
Hot water 40 ml
Fresh milk 50 ml
Lemon juice ½ teaspoon
baking mould 35cm x 25 cm( 10 inches x 12 inches)
Method
1 Separate the 4 egg yolk and egg white , set aside.
2 Pour the cake flour onto sieve. Sift the flour.
3 Keep it aside to use later.
4 Take another big bowl, put the 4 egg yolks into big bowl.
5 Put 10g caster sugar into the egg yolk, mix with a whisk.
6 Add corn oil and fresh milk into egg yolk batter, mix well.
7 Add sifted cake flour, mix about 18 times until the mixture
is smooth ( no lumps), Set aside.
8 Take a small amount ( about 3 spoons ) of egg yolk mixture
Into a small bowl for drawing giraffe pattern.
9 Take 40 ml hot water, add cocoa powder, stir well.
10 Add chocolate liquid into the big bowl egg yolk mixture.
11 Continue to mix well. Put it aside.
12 Put the egg white and lemon juice into mixing bowl. Beat at high
speed until foamy “ stiff peaks”( mixing speed 6 for 30 seconds)
13 Preheat the oven 150 degree celsius.
14 Use a spatula to put a spoonful of egg white into the original cake
batter and mix gently.( to mix the meringue and egg yolk batter together)
15 Prepare a small piping bag and insert a measuring cup. Pack the
original cake batter into piping bag.
16 Draw the giraffe pattern using the original cake batter.( baking mould 35cm x 25 cm)
17 Put the baking mould into lover middle level of preheated oven to bake
for 3 mins at 150 degree celsius .
18 Next , ( divide egg white into 2 parts)to mix the balance egg white ( meringue) into the big bowl
egg yolk batter 2 times .( half of the egg white fold 15 times , do not mix too long time)
add the other half and mix ( fold 15 times)
19 It should be thick and fluffy texture ( not liquid)
20 Pour the well-mixed batter into rectangular baking mould.
21 Use scraper to smooth the surface.
22 Tap the rectangular baking mould onto table to remove air bubbles.
23 Put the baking mould into lower middle-level of pre-heated oven to
bake (at upper and lower heat ) 150 degree Celsius for 25 minutes.
24 Cream ingredients:
Whipping cream 200 ml ( Anchor brand)
Icing sugar 20 g
Put all the whipping cream and icing sugar into mixing bowl at high speed
( speed 10 for 1 minute and 30 seconds)
25 Remove the cake from the oven and cool it down.
26 Turn the cake over onto a new sheet of paper and remove the old baking

27 Turn the cake over again onto new sheet of baking paper ( the giraffe
Pattern must be at bottom)
28 Apply a thin layer of cream onto the full piece of cake
29 Put more cream on one side of the cake so that can easily roll up and
Support the cake when you start rolling.
30 Roll up the cake slowly with gentle action.
31 Slowly pull up the paper, and the cake will roll forward automatically.
32 Chill the cake inside chiller for 10 minutes( optional)
33 Cut the side of the roll cake.( optional)
34 Enjoy your cake.
