[Ingredients]
Bread Sponge Starter(140g Bread flour, 100g Water, 2g Yeast)

30g Bread flour
30g Cake flour
15g Milk powder
18g Granulated sugar
2g Salt
1g Yeast
25g Water
15g Unsalted butter
250g Red bean paste
[Instructions]
1. Prepare bread sponge starter (mix all ingredients, rise at room temperature for 1 hour, transfer to the fridge for 15-18 hours)
2. Mix all ingredients except butter and salt in the stand mixer until smooth and elastic
3. Incorporate the softened butter and salt into the dough and knead until fully combined
4. Let it rise for 30 minutes
5. Punch down the risen dough and divide it into 8 equal portions, roll each into a ball
6. Let it rest for 20 minutes
7. Divide the red bean paste into 8 equal portions, roll each into a ball
8. Flatten each piece, place the red bean paste in the center, and fold the dough around the filling, pinch to seal.
9. Place the shaped buns seam-side down on a lined baking sheet, let them rise in warm place for another 40 minutes
10. Brush the tops of the buns with an egg wash (beaten egg) for a shiny finish, sprinkle some sesame
11. Bake in the preheated over at 190C for 17 mins
