1 medium onion, diced
2 carrots, diced
2 celery stalks, diced
4 cloves garlic, minced
8 cups chicken stock
1 lb boneless skinless chicken breasts or thighs
¾ cup orzo pasta
1 tsp salt (adjust to taste)
½ tsp black pepper
½ tsp dried thyme
½ tsp dried oregano
Zest of 1 lemon
Juice of 1–2 lemons (to taste)
2 tbsp fresh dill or parsley, chopped
Optional:
¼–½ cup heavy cream (for creamy version)

Step 1 – Sauté the Aromatics
Heat the olive oil or butter in a large stainless-steel pot over medium heat.
Add the diced onion, carrots, and celery. Cook for 5–6 minutes, stirring occasionally, until softened but not browned.
Add the minced garlic and cook for 30 seconds until fragrant.
Step 2 – Build the Soup
Pour in the chicken stock. Add the chicken breasts or thighs, salt, pepper, thyme, and oregano.
Bring the soup to a gentle boil.
Step 3 – Simmer the Chicken
Reduce heat to a steady simmer. Cover partially and cook for 15–18 minutes, or until the chicken is fully cooked and tender.
Step 4 – Shred the Chicken
Remove the chicken from the pot and shred using two forks.
Return the shredded chicken to the soup.
Step 5 – Cook the Orzo
Stir the orzo into the soup. Simmer uncovered for 8–10 minutes, stirring occasionally, until the orzo is tender.
Step 6 – Finish with Lemon
Stir in the lemon zest and lemon juice.
If making the creamy version, add the heavy cream and stir gently to combine.

Remove from heat and garnish with fresh dill or parsley.
