MANGO SORBET with Sesame Praline

I’m sure you have loads of mangoes at home. Get yourself some fresh green limes organic if you can and make some sorbet!
For the Sorbet:
1kg chopped / squeezed mango
1/2 cup sugar
1/2 cup water
2 limes juiced
3 limes for zest
For the praline:
1/2 cup sugar
1/2 cup sesame seeds
2 tsp chili flakes
Tip: If the mangoes are sour add less lime juice.
If mangoes aren’t sweet enough add extra simple syrup
Sorbet
1. Simple syrup - boil water and sugar till dissolved. Set aside to cool.
2. Pulp all the mangos.
3. Zest and juice the limes
4. In a blender/food processor combine mango pulp, lime juice and simple syrup until smooth. Strain if the mango is hairy.
5. Churn the mix and towards the end add lime zest
6. Once ready, move to a container to freeze.
Praline
1. Spread a thin layer of sesame seeds and chili flakes on baking paper
2. Melt the sugar in a pan over medium heat without stirring, until fully melted and golden brown.
3. Pour the melted sugar on the sesame seeds and chili flakes, and quickly stir and spread to combine. let it cool until it sets.
4. Smash the praline and crush it in a mortar and pestle till you get a fine crumb
5. To serve, sprinkle the praline crumb over the sorbet and finish with a little more lime zest and mint. enjoy!
