✨Macro & Calorie Tracked Chicken Capsicum Fried Rice✨
✨Ingredients✨
Single serving
Chicken Breast mince (weighed raw) 150g
White rice (weighed raw) 40g (soaked)
Capsicum (chopped) 30g
Oil 7.5ml
Spring onions white 1 medium head
Garlic Paste 1/2 tspn
Soy Sauce 1/2 tspn
Chilli sauce 1/2 tspn
Vinegar 1/2 tspn
Black pepper 1 tspn
Chicken powder 2.5 tspn
Spring onions green
✨Recipe✨
In a bowl, mix together Soy Sauce 1/2 tspn, Chilli sauce 1/2 tspn, Vinegar 1/2 tspn & Black pepper 1/2 tspn. Set aside
To boiling water, add 1 tspn vinegar followed by soaked rice. Cook till 85% done
To 7.5 ml oil, add 1/2 tspn Garlic paste & a chopped medium Spring onion’s head. Sauté
Add 150g Chicken breast mince (weighed raw) & cook on medium to low flame till it turns white. Add prepared sauce & stir. Cover & cook on medium to low flame
Gradually add in water ONLY when needed. Using less water will keep chicken tender. Stir occasionally
When there is little water left, add in chopped capsicum with a tspn Chicken powder, mix. Cover & cook till capsicum softens
Now add another tspn of Chicken powder & 1/3tspn black pepper, stir well
Turn off flame, spread cold rice, spring onion’s greens & half tspn Chicken powder (ONLY if you prefer more salt in your meals) Cover & leave it for 5 minutes
After 5 minutes, remove lid & very gently mix everything well
High Protein Chicken Capsicum Fried Rice is ready to be devoured
