In this Mediterranean-inspired recipe, lightly boiled potatoes are pan-fried with garlic, then tossed with sun-dried tomatoes, fresh green onions, and olives. The result? A warm, savory dish that works perfectly as a side or even on its own as a light meal.
🥔 Ingredients:
500 g fresh potatoes
100 g sun-dried tomatoes (boiled or preserved in olive oil)
5–6 stalks of fresh green onions
A handful of parsley
50 g pitted green or black olives
3 cloves of garlic
Olive oil and salt
Step-by-Step Recipe
Gently scrub the fresh potatoes. If using large ones, peel and cut them.
Cut into thick wedges and boil in salted water until just tender — don’t overcook.
Drain and pan-fry the potatoes with olive oil and garlic in a cast iron pan.
While the potatoes are browning, chop green onions, parsley, sun-dried tomatoes, and olives.
Add the chopped ingredients to the crispy potatoes.
Drizzle with a bit more olive oil and sauté for a couple more minutes.
Serve warm as a side dish, or turn it into a salad by adding your favorite dressing.
