In this video, we’re making a traditional Istanbul-style Easter bread, a beloved recipe that bridges both Greek and Turkish cultures! This mahleb brioche is a classic found in the bakeries of Istanbul, known for its incredibly soft texture and rich aroma. Whether for breakfast, tea time, or a festive treat, it’s a perfect addition to any table!
Ingredients (For 4 Large Loaves)
200 ml warm milk
200 ml vegetable oil
100 ml warm water
170 g granulated sugar
4 eggs (reserve 2 yolks for brushing)
4 teaspoons mahleb (available at spice shops or large supermarkets)
10 g dry yeast (or 20 g fresh yeast)
700 g all-purpose flour
Instructions
1️⃣ Activate the yeast: Mix warm milk and yeast, then let it sit for 5-10 minutes.
2️⃣ Combine sugar and eggs, whisking well.
3️⃣ Add vegetable oil and mahleb, then gradually mix in warm water and flour.
4️⃣ Add flour gradually—environmental factors like room temperature and egg size can affect the dough's consistency. Start with 700 g, then adjust if needed.
5️⃣ The dough should be soft but not sticky.
6️⃣ First rise: Let the dough rest in a warm place for 30-60 minutes, or until it triples in size. Alternatively, refrigerate overnight for a slow rise.
7️⃣ Divide the dough into 4 equal portions (or halve the recipe for 2 loaves).
8️⃣ Further divide each piece into 3 equal strips, roll them into long ropes, and braid them into a classic tsoureki shape.
9️⃣ Second rise: Let the braided loaves rest for another 30 minutes.
🔟 Egg wash: Brush with egg yolk, making sure to coat the seams well. Sprinkle with sliced almonds, crushed walnuts, or hazelnuts if desired.
1️⃣1️⃣ Bake at 180°C (no fan) for about 30 minutes (less time for smaller loaves). Bake until golden brown and fragrant.
