We love shrimp and when you sauté it with some nice Asian ingredients, it makes a delicious meal served over rice. This dish is super quick to make – it cooks super fast! You can make it as spicy or as mild as you want!
Shrimp in a Spicy Szechuan Sauce
Serves 2
¾ pound shrimp, peeled and deveined (I used 21-25)
1 Tbsp. butter
1 Tbsp. Sesame oil
4 cloves garlic, minced
1 Tbsp. ginger, grated
2 each green onion, sliced
2/3 cup lobster or fish stock
2 Tbsp. soy sauce
½ tsp. red pepper, crushed
1 tsp. sriracha sauce
1. Melt butter over medium-high heat in a sauté pan. Add sesame oil and shrimp and cook until they are halfway cooked through – 2-3 minutes. Remove from the pan.
2. Add garlic, ginger and green onion and sauté for one minute.
3. Add stock, soy sauce and bring to a simmer; reduce it for one minute. Add the shrimp back into the pan along with the crushed red pepper and sriracha. Sauté for one more minute and serve over rice.
