Ingredients
• Unsalted cold butter: 113 g (1/2 cup)
• Granulated sugar: 50 g (1/4 cup)
• Brown sugar: 100 g (1/2 cup)
• Vanilla extract: 5 g (1 tsp)
• Egg: 50 g (1 large, without shell)
• Salt: 3 g (1/2 tsp)
• Cocoa powder: 25 g (1/4 cup)
• All-purpose flour: 200 g (~1 1/2 cups + 2 tbsp)
• Baking powder: 6 g (1 1/2 tsp)
• Baking soda: 3 g (1/2 tsp)
• Cornstarch: 6 g (2 tsp)
• Semi + dark chocolate: 250 g (~1 1/2 cups)
Instructions
1. Start by beating 113 g cold butter (1/2 cup) for 1 minute to soften and aerate slightly.
2. Add 50 g granulated sugar (1/4 cup) and 100 g brown sugar (1/2 cup). Beat until smooth and creamy.
3. Add 1 large egg (~50 g) and 1 tsp vanilla extract (5 g). Mix well.
4. Add 1/2 tsp salt (3 g) and mix.
5. Add 1/4 cup cocoa powder (25 g) and mix.
6. Add 200 g all-purpose flour (~1 1/2 cups + 2 tbsp) and mix.
7. Add 1 1/2 tsp baking powder (6 g), 1/2 tsp baking soda (3 g), and 2 tsp cornstarch (6 g). Mix until dough forms.
8. Fold in 250 g semi + dark chocolate (~1 1/2 cups) until evenly distributed.
9. Scoop dough into 6 equal portions (~135–138 g each). Roll into balls and gently press with fingers to create structure. Freeze for 1 hour.
10. Bake at 350°F (190°C) for 14–15 minutes until edges are set but centers remain slightly soft.
11. Let cookies rest on tray for 5 minutes, then transfer to a rack.
12. Drizzle with melted chocolate and decorate with sprinkles if desired.
