-3 1/2 cups all purpose flour
-1 tbsp water (plus more as needed)
-1/2 tsp salt
-4 eggs

Combine flour, water and salt and stir together. Make a well in the center and add in the eggs. Break up the yolks, then using either the dough hook attachment on your mixer or knead by hand until the dough comes together adding water if needed to help the dough stick when pressed together. Wrap in plastic wrap and leave for 30 minutes. Divide into equal-ish portions. Keep unused dough wrapped in plastic. Take out the piece you want to use and flatten it out to help get the pasta attachment started. Put through pasta attachment at 1 for 3 x's, 2 for 3 x's, and then 3 for 3 x's. Then put through at 4. Check to see if you like that width, if so, awesome, move onto your next piece. If not, push through til 5. Lay out flat on a lightly floured surface until ready to use. The pasta will dry out completely in 12-24 hours. You can speed up the process with a fan.
You can put the lasagna noodles uncooked directly into the lasagna.
