Fry Squash and Paratha roti is another Guyanese favorite. According to folks’ stories, this dish is enjoyed on a rainy day, or it will rain when you cook squash.
Fry long Squash with Salted Bangamary.
Ingredients:
3 lbs Squash
7 clove garlic
4 medium tomatoes
1 onion
Salted Fish optional
Oil to cook
Wiri wiri pepper to taste
Salt to taste
Paratha or oil roti:
Ingredients:
3 cups all-purpose flour plus 1/2 cup for dusting
1 tsp baking powder
1 1/4 cup room temperature water
3 tbsp oil, ghee,
1 tsp butter or margarine room temperature
1/4 cup oil for cooking/basting
