This gorgeous Brazilian cake is not the same carrot cake that most of us know and love, but it's a delicious change from the norm. It's also ridiculously easy to make!
Carrots are blended with oil, eggs and sugar, then combined with flour and baking powder - that's it! The result is a gorgeously moist carrot cake that takes literally minutes to prepare.
You can enjoy the cake as it is, but why not serve it Brazilian style with a quick chocolate icing? Melt cooking chocolate with milk, honey and butter, then pour over the cooled cake. While you might not be convinced of the combination of carrot and chocolate, you will be after tucking into a slice of this cake!
