Kartule (Spine Gourd) is a seasonal vegetable and mostly available during monsoon. It belongs to the bitter gourd family but is not as bitter as bitter gourd. There is a lot of health benefits of Kartule vegetable. It is rich in fiber and vitamins. its skin contains a lot of nutrients hence skin should not be removed while cooking. it is easy to make and kartule bhaji is a very good side dish and can be served with Rice and Dal or Chapati.
