📖 Vegan Vanilla Crescents Recipe 📖
Ingredients (for 1 tray of vanilla crescents):
Whole wheat flour (1 cup/ 120 g)
Xylitol (= birch sugar, ⅓ cup/ 70 g): https://amzn.to/39nbw3T
Ground almonds (½ cup/ 50 g)
Ground vanilla (large pinch)
Macadamia nuts (unsalted, ½ cup/ 80 g): https://amzn.to/37ljMyC
Soy milk (½ cup/ 100 ml)
Powdered xylitol (or powdered sugar; ½ cup/ 50 g): https://amzn.to/36kiCo0
Kitchen equipment you need:
Small food processor or blender: https://amzn.to/3fQ0bdC
Directions:
1. Place the flour, xylitol, ground almonds and ground vanilla in a big bowl and mix well.
2. Place the macadamia nuts and soy milk in your small food processor or blender and blend for about 1 minute or until completely smooth. Preheat your oven to 170°C / 338°F.
3. Add the macadamia-cream to the dry ingredients and knead well (using your fingers).
4. Roll the dough into a sausage. Chop the dough into pieces of equal size and gently form them into crescents. In case the dough is too sticky, you can cool it in the fridge for an hour (beforehand).
5. Line your baking tray with parchment paper. Place the crescents on the lined baking tray and bake at 170°C / 338°F for about 20 minutes.
6. Carefully coat the vanilla crescents with powdered xylitol while they are still warm.

Tips:
You can replace the macadamia nuts with cashew or almonds. The ground almonds can be replaced with ground hazelnuts.
If you slightly moisten your hands, it’s much easier to shape crescents out of the dough.
The exact baking time depends on your oven - so better check your vanilla crescents a little earlier to prevent them from burning.
You can store the cookies in a cookie jar for a few days. If you want to keep them fresh for longer, you can store them in your freezer.
