📖 Super Easy Fluffy Vegan Strawberry Dumplings 📖
Ingredients (for 9 small dumplings):
Potato dumpling mix (140 g): https://amzn.to/2RoESYJ
Rice milk (1 cup/ 250 ml)
Strawberries (9 pcs.)
Ground hazelnuts (50 g)
or
Shredded coconut (50 g)
Powdered xylitol (or powdered sugar; 50 g): https://amzn.to/3t6Pbyl
1. Mix the potato dumpling mix with rice milk (using a small whisk or a fork). Cover and leave for 10 minutes.
2. Thoroughly knead the dough and roll it into a sausage. Chop the dough into 9 pieces of equal size.
3. Flatten each piece of dough, place a strawberry on top, fold in and form a dumpling. Pay attention to closing the dumpling completely, so it won’t burst open while cooking.
4. Bring a big pot of water to a boil, then lower the temperature. When the water doesn’t boil anymore, place the dumplings in the pot and gently cook them on low heat, for about 10 minutes.
5. Take each dumpling out separately and coat it in ground hazelnuts or shredded coconut while it’s still moist (so the topping sticks to the surface of the dumpling). Sweeten to taste (we used powdered xylitol in the video).
Enjoy!
Tips:
We sprinkled the finished dumplings with powdered xylitol because the dumplings themselves aren’t sweet (and because it looks nice!). If you prefer, you can sweeten the dough beforehand, instead.
Don’t cook the dumplings in boiling water! Just simmer them on a low heat, so they get fluffy.
A healthier alternative to regular confectioner’s sugar is powder xylitol (= birch sugar: https://amzn.to/2OEW6jB) and powdered erythritol (https://amzn.to/3fXxaPv).
