Forget about boring dinners — today we’re making juicy baked champignons stuffed with veggies and cheese: flavorful, colorful, and super easy! First, we make a fragrant brush-on marinade with garlic, soy sauce, paprika, Herbes de Provence, and olive oil, and coat the mushrooms with it. Then we remove the stems, chop them, and add them to onion, carrot, tomato, and red bell pepper. After that, we put cheese into the mushroom caps, top with the cooked vegetables, and bake until golden and tender. And for serving, we make a fresh arugula salad with cucumber, cherry tomatoes, lemon juice, mozzarella, and a sesame dressing. A perfect option for a quick lunch or dinner when you want something very tasty yet simple to make.

👇 Ingredients I use in the video:
Main dish (baked mushrooms):
• Champignons (button mushrooms) — 6 pcs
• Olive oil
• Garlic — 2 cloves
• Soy sauce
• Herbes de Provence, paprika
• Onion
• Tomato
• Red bell pepper
• Carrot
• Salt, black pepper
• Cheese
Salad (arugula):
• Arugula
• Cucumber
• Cherry tomatoes
• Lemon juice
• Mozzarella cheese
• Sesame oil, sesame seeds
🍽 Make a brush-on marinade with olive oil, garlic, soy sauce, paprika, and Herbes de Provence and coat the mushrooms. Remove and chop the stems, add them to onion, carrot, tomato, and red bell pepper, and sauté until tender. Put cheese into the mushroom caps, top with the vegetables, and bake at 180°C (356°F) for 20–25 minutes. For the salad, toss arugula with cucumber and cherry tomatoes, add mozzarella, drizzle with lemon juice and sesame oil, and finish with sesame seeds — simple ingredients, but the flavor is so rich that you’ll want to make it again and again!
