How to make Kakarkay Fry/Bitter Gourd Fry

A traditional South Indian recipe which is spicy and aromatic.
Ingredients:
Bitter Gourd- 250 gms
Buttermilk- 300ml
Red Chillies- 12
Coriander Seeds-2 tbsp
Cumin Seeds- 1 tbsp
Desiccated Coconut- ½ tbsp
Garlic Cloves-6
Salt-1 tsp
Oil- 4 tbsp
Preparation:
Take 12 dry red chillies, 2 tbsp coriander seeds and 1 tbsp cumin seeds dry roast and keep aside until they cool down.
Boil 1 inch pieces of bitter gourd with buttermilk and salt, make sure the pieces are submerged in the buttermilk. Boil until the pieces become soft in medium flame and then keep on high flame until buttermilk evaporates.
After the spices cool down, blend it to coarse paste. Add about 6-7 garlic cloves for a better texture at the end.
Let the pieces of bitter gourd cool down completely and strain the excess water . Take a pan and add oil for shallow frying bitter gourd until the outside is golden brown. Add the masala at the end and let everything cook on low flame for 5 mins, adjust oil for the masala to cook well.
Serve: Best served with daal on the side. Make your food with love and make your belly happy :)
