On today’s episode of Packing Lunch for My Picky Eating First Grader, we had one of those “running low on groceries” kind of mornings.
You know the days when it feels like you don’t have all the ingredients for a full, put-together meal? That was today. So instead of overthinking it, I made it work.
We turned simple ingredients into tortilla pinwheels — shaved chicken breast, sliced corned beef, and cheese, warmed slightly, rolled up in a tortilla, and cut into little wheels with a crinkle cutter. And honestly? It worked.
Sometimes packing for a picky eater isn’t about Pinterest-perfect lunches. It’s about using what you have, keeping at least one safe element, and making it fun enough that they’ll actually eat it.
