INGREDIENTS

2 pounds of potatoes (preferably waxy potatoes)
1 pound of reblochon cheese
1 medium-sized onion, thinly sliced
6 slices of bacon or pancetta, diced
½ cup of dry white wine
Salt and pepper to taste

INSTRUCTIONS

1. Preheat your oven to 350°F (180°C).
2. Peel the potatoes and cut them into thick slices or chunks.
3. Add the sliced onion and diced bacon or pancetta. Sauté until the bacon is crispy and the onion is translucent.
4. Add the potatoes to the skillet and stir well, allowing the flavors to combine. Season with salt and pepper to taste.
5. Pour the white wine over the potato mixture and let it cook for a few more minutes until the wine has evaporated.
6. Grease a baking dish or a tartiflette dish with some butter. Layer half of the potato mixture in the dish, then cut the reblochon cheese in half horizontally and place one half on top of the potatoes. Repeat the layering process with the remaining potatoes and cheese.
7. Place the dish in the preheated oven and bake for about 15 minutes, or until the cheese melts and starts to turn golden brown.
8. Once the tartiflette is ready, remove it from the oven and let it cool for a few minutes before serving. Serve warm and enjoy the rich flavors of this traditional French dish.
