INGREDIENTS
1/2 lb cow brains
3 garlic cloves
1 onion
3 lemons
3 bay leaves
1 teaspoon mustard
1 tablespoon of soy sauce
1 dessert spoon Worcestershire sauce
½ teaspoon garlic powder
½ teaspoon ground pepper
3 tablespoons vegetable oil
6 corn tortillas
INSTRUCTIONS
1. Rinse the brains a couple of times with clean water to remove excess blood, and with the help of a knife carefully remove any clots that may still be present.
2. Boil the brains for 10 minutes together with a teaspoon of salt, peppercorn, garlic cloves, white onion and bay leaves. After the cooking t, carefully pour out the water and allow the brains to cool.
3.Once cool, transfer the brains to a board and cut into thick slices with a sharp knife.
4. In a skillet over medium-high heat add 3 tablespoons of vegetable oil and sauté the rest of the thinly sliced white onion. Add the chopped brains and sauté for a couple of minutes until lightly golden.
5. Add the mustard, soy sauce, Worcestershire sauce, pepper, garlic powder, and sauté for a couple more minutes and mix all the ingredients very well.
6. Heat the corn tortillas on a griddle, and serve with salsa roja, avocado and coriander.
