Описание: These cheesy stuffed baked potatoes are crispy on the outside and soft, creamy, and flavorful inside. The russet potatoes are baked until golden, then filled with a delicious chicken and vegetable mixture, topped with cheddar and fresh mozzarella, and baked again until perfectly melted.
Served with a fresh Mediterranean-style salad, this recipe makes a complete and satisfying dinner. It’s easy, comforting, and perfect for busy weeknights.

🛒 Ingredients
For the Potatoes:
• 2 large russet potatoes
• Olive oil
• Salt
• Black pepper
• Paprika
• Thyme

For the Filling:
• 1 small onion, chopped
• 1 garlic clove, grated
• Butter
• Olive oil
• Reserved potato flesh
• 1 chicken breast, finely diced
• ½ bell pepper, diced
• 1 large mushroom, chopped
• Turmeric
• Salt & black pepper
• Fresh parsley
• Cheddar cheese
• Fresh mozzarella

For the Salad:
• ½ bell pepper
• 2 cucumbers
• Cherry tomatoes
• Fresh dill
• Mini fresh mozzarella balls (Bocconcini)

Salad Dressing:
• Olive oil
• Balsamic vinegar
• Salt
• Black pepper
• Garlic powder

🔥 Oven Instructions
First bake:
400°F (200°C) for 30–35 minutes

Second bake (after stuffing):
375°F (190°C) for 8–10 minutes
Optional broil for 1–2 minutes for golden cheese.

⭐ Important Tips
✔ Use russet potatoes for best texture
✔ Dry the scooped potato before adding to filling
✔ Cook chicken on medium heat to keep it juicy
✔ Don’t overbake the second time — just melt the cheese
✔ Let potatoes rest for 3–5 minutes before serving
