RED THAI CURRY
Look like a pro whipping up a storm in the kitchen with this super simple, delicious & nutritious recipe. Perfect for meal prep, entertaining & as a tasty treat.

FOOD
1 tbsp Vegetable Oil
2 Chillies
1 Thumb Sized Piece of Ginger
2 Cloves of Garlic
3 Spring Onions
6 Skinless Chicken Thighs Diced
2 tbsp Red Thai Curry Paste
400ml Canned Coconut Milk
2 tbsp Carton Light Coconut Milk
1 tbsp Chicken Stock
1 Bunch of Pak Choi
Jasmine Rice
Sprig of Coriander
Pinch of Desiccated Coconut
FUN
-Heat a tablespoon of vegetable oil in a large pan on the hob
-Chop the chillies, garlic, Ginger & Spring Onions and heat in the oil for a few minutes
-Brown the chicken thighs in the herbs and spices and add the red thai curry paste
-Add the coconut milk and chicken stock and simmer to taste
-Place the pak choi in the curry sauce at the end and finish off cooking until the pak choi is soft
-Cook the rice
-Garnish with coriander and desiccated coconut
