INGREDIENTS:
Single Dinner Batch:
1 pound of carrots
1 medium onion
1 clove garlic
1½ Tbsp grated ginger
½ tsp thyme
pinch pepper
3 cups liquid: I used 2:1 ratio chicken stock to water
add about 1 tsp salt if you stock is unsalted
1 Tbsp olive oil for sautéing
Canning Batch: Makes 4.5 quarts or 9 pints
4 pounds of carrots
4 medium onions
4 cloves garlic
6 Tbsp grated ginger
2 tsp thyme
½ tsp pepper or to taste
12 cups liquid: I used 2:1 ratio chicken stock to water
add about 4 tsp salt if you stock is unsalted
4 Tbsp olive oil for sautéing
