How to make Sweet and Sour Chicken Balls

Welcome to Mak's Cookbook!
Today we are making the classic sweet and sour chicken balls - below are the ingredients list and instructions laid out!
To make roughly 11/12 balls
Ingredients:
260g chicken breast
1/2 tsp salt
1/4 tsp chicken powder
1/8 tsp five spice powder
1/8 tsp white pepper
1 tsp shaoxing wine
1 tsp sesame oil
100g self raising flour *
1/8 tsp salt
150ml water
an extra ~30g self raising flour to coat chicken
McDougalls is preferably used for self-raising flour as it guarantees a good crunch and lightness to the batter! We find slightly more expensive and higher quality flour works best for this recipe so some trying and testing may be required if you cannot access this brand :)
Instructions:
1) Cut chicken breast evenly into 11/12 pieces or accordingly to the size of the breast
2) Wash cut chicken breast under running water and drain in colander for 10 minutes until dry, or use kitchen towel.
3) Add the spices, shaoxing wine, and sesame oil to the chicken and mix
4) Now, for the batter mix together the self raising flour, salt, and water
5) Coat the chicken with some extra self raising flour
6) Coat the chicken in the batter
7) Heat up oil in a wok at roughly 140°C and fry the chicken until crispy and they do not stick together
8) Take balls out and increase temperature of oil to 180°C, ready for the second fry.
9) Fry for a further 3-4 minutes
