TRIGGER WARNING: This isn't your everyday way to small dice an onion.
How I was taught to small dice onions in culinary school never made sense.
Cutting into the onion horizontally, towards your fingers, with the outer layers flopping around, keeping the root on as "grip, it just seemed messy and ineffective.
So, after many years of dicing onions, I found this method to be more effecient, safer, and faster.
