【recipe】
Donut dough
110 g milk
6 g dry yeast
25 g egg (1⁄2 large egg)
125 g bread flour
50 g cake flour
15 g granulated sugar
5 g baking powder
5 g matcha powder
20 g butter
2 g salt
Make the donut dough
1.Pour the milk into a bowl and microwave until lukewarm (about body
temperature).
2.Add the dry yeast and egg, mixing well after each addition.
3.Sift together the bread flour, cake flour, baking powder, and matcha
powder.
4.Add the sifted dry ingredients, granulated sugar, and salt to the bowl.
Pour in the yeast mixture and mix with a rubber spatula until combined.
5.Transfer the dough to a lightly floured surface and knead until no dry
flour remains.
6.Add the butter and continue kneading until the dough becomes smooth
and elastic.
7.Place the dough in a bowl, cover, and let rise at 40°C / 104°F for about
40 minutes, or until doubled in size.
8.Divide the dough into 6 equal portions and shape each into a ball. Place
on parchment paper squares.
9.Let rise again at 40°C / 104°F for 30 minutes.
10.Heat vegetable oil to 180°C / 355°F. Fry the donuts for about 3 minutes
per side until golden brown.
11.Let cool slightly, then coat with non-melting powdered sugar.

Matcha custard filling
40 g egg yolks (from 2
large eggs)
40 g granulated sugar
180 g milk
15 g cornstarch
2.5 g matcha powder
10 g butter
Make the matcha custard filling
1.Heat the milk in a small saucepan until just beginning to simmer.
2.In a bowl, whisk the egg yolks and granulated sugar until pale and
slightly thickened.
3.Gradually add the hot milk while whisking. Strain the mixture back into
the saucepan.
4.Cook over medium heat, whisking constantly, until thickened.
5.Once it begins to boil, continue cooking while whisking for 1 more
minute.
6.Transfer to a container and chill in the refrigerator until cold. (Placing an
ice pack underneath helps it cool faster.)
7.Transfer the custard to a piping bag and pipe into the center of each
donut.
