Pattern Batter (Decoration)
20 g unsalted butter, softened
15 g powdered sugar (icing sugar)
15 g cake flour
15 g egg white
Food coloring (red, blue), as
needed
Sponge Cake (20 × 25 cm / 8 × 10-
inch)
3 large eggs
70 g granulated sugar
60 g cake flour
30 g milk
10 g vegetable oil
Food coloring (pink), as needed
Cream Filling
200 g heavy cream (40% milk fat)
15 g granulated sugar
70 g cream cheese, softened
3 mandarins (satsumas), peeled
1. Make the Pattern Batter
1.In a bowl, beat the softened butter until smooth.
2.Add the powdered sugar and mix well.
3.Sift in the cake flour and mix until combined.
4.Add the egg white and mix until smooth.
5.Divide the batter into three portions and color each with food coloring as
desired.
6.Transfer each color to a piping bag.
7.Line a baking tray with parchment paper and pipe your desired pattern.
8.Place in the freezer for 15 minutes to set.
2. Make the Sponge Cake
1.In a heatproof bowl, combine the eggs and granulated sugar.
2.Place the bowl over a hot water bath and gently warm the mixture to
lukewarm.
3.Remove from heat and whip with a hand mixer until thick, pale, and
fluffy.
4.Sift in the cake flour and gently fold with a rubber spatula.
5.In a separate bowl, mix the milk and vegetable oil.
6.Add a small amount of batter to the milk mixture, mix well, then pour it
back into the main batter and fold gently.
7.Lightly tint the batter with pink food coloring if desired.
8.Pour the batter over the frozen pattern.
9.Bake in a preheated 170°C (340°F) oven for 15 minutes
3. Make the Cream Filling
1.In a bowl, combine the cream cheese, granulated sugar, and heavy
cream.
2.Whip with a hand mixer until firm peaks form.
4. Assemble the Roll Cake
1.Trim the edge of the sponge diagonally to help with rolling.
2.Spread an even layer of cream over the cake.
3.Arrange the peeled mandarins in a line, filling the gaps with extra cream.
4.Roll the cake tightly using the parchment paper as a guide.
Chill before slicing for clean cuts.
