Hello my lovely snack people. Welcome back to my 2nd episode of craving series. This week is time for Coconut Cookie!
Look, cookies are not a typical or traditional Thai dessert but it has been so widely adopted into our pantry. With more ingredients available at convenience, making cookies is so easy. It has been a long time since I had a bite of cookie. Today, I will dive into making my own recipe, keeping some tradition and adding something new into it. Let’s go!
Ingredients
150 g all purpose flour
150 g oatmeal
200 g solidified coconut oil
120 g brown sugar
100 g desiccated coconut
4 tsp pumpkin seed
½ tsp baking soda
½ tsp salt
2 eggs
