🥩Pork Tenderloin Roll - Recipe
Servings: 6
Calories: ~120 kcal per serving
Ingredients:
350 g Pork tenderloin
2 dashes Coarse sea salt
Black pepper to taste
110 g bacon
2 pinches salt
25 g dried apricots
Fresh Rosemary to taste
Sauce:
12 g whole grain mustard
20 g soy sauce
30 g BBQ sauce
Instructions:
Finely chop the fresh rosemary and dried apricots. Set aside.
Slice the pork tenderloin lengthwise and open it like a book.
Season with salt and black pepper. Gently pound the meat to about 5 mm thickness for even rolling.
Lay the bacon strips in an even layer, then evenly distribute the chopped rosemary and apricots over the surface. Roll everything tightly into a log.
Secure the roll with 6 pieces of kitchen twine and slice the log into equal pieces.
Heat a pan over high heat. Quickly sear the rolls on all sides until golden brown.
Mix the whole grain mustard, soy sauce, and BBQ sauce until well combined.
Transfer the rolls to a pan and brush generously with the sauce.
Bake at 380°F (190°C) for about 15 minutes, or until fully cooked.
Remove the kitchen twine before serving.
