Ingredients:-
Cauliflower florets- 1cup
Besan/ Chickpea flour- 4tbsp heaped
Rice flour- 2tbsp heaped
Kalonji/ Nigella seeds- 1/8th tsp or a pinch (ajwain/carom seeds can be used instead)
Ginger garlic chili paste- 1tsp
Salt- as required
Baking soda- a pinch
Cumin powder- 1/2tsp
Paprika powder- 1/2tsp
Turmeric- 1/4 tsp
Water- as required
Oil- for frying
Process:-
1. Dip the florets in boiling water for 20mins. After 20mins, strain and keep aside.
2. Make a batter by mixing the flours, dry ingredients, and water as required.
3. Beat the batter until lighter and fluffier.
4. Heat the oil in medium flame. Dip the florets in the batter and deep fry them.
5. Flip 2-3times until they are golden brown equally from all the sides. Take them out in a paper towel first.
6. Serve them hot along with tea or coffee. This goes best with ketchup or coriander dip- • CORIANDER DIP| DHANIA CHUTNEY
