Pkhali is a delicious and vibrant Georgian dish made with walnuts, a mix of vegetables or greens, and fragrant spices. You can make it with beets, spinach, beans, cabbage, eggplant, or a combination of your favorites! 🥗✨
Ingredients:
• Spinach – 500 g
• Boiled beets – 2
• Walnuts – 200 g
• Garlic – 4 cloves
• Cilantro – 50 g
• Wine vinegar – 2 tbsp
• Khmeli-suneli – 1 tbsp
• Coriander – 1 tsp
• Salt to taste
• Pomegranate seeds for garnish
How to make:
1️⃣ Boil the beets until soft.
2️⃣ Wash spinach leaves and blanch them in boiling water. Squeeze out excess moisture.
3️⃣ Grind walnuts with cilantro and garlic using a meat grinder or blender.
4️⃣ Mix the walnut paste with khmeli-suneli, salt, coriander, and wine vinegar until well combined.
5️⃣ Pass the boiled beets through a meat grinder and squeeze out extra liquid.
6️⃣ Divide the walnut mixture into two parts: mix one with the beets and the other with the spinach. Adjust salt to taste.
7️⃣ Shape the mixtures into small balls (50-70 g each).
8️⃣ Arrange on a plate and garnish with pomegranate seeds or fresh cilantro leaves.
