Jambalaya
~Ingredients~
1 Tbsp Oil
1lb Andouille Sausage Cut Into 1/4" Slices
1.5lbs Boneless Skinless Chicken Thighs Cut Into Bite Size Pieces
2 Tbsp All Purpose Flour
2 Tbsp Unsalted Butter
1 Yellow Onion Chopped
4 Green Onions Chopped
4 Cloves Garlic Minced
3 Ribs Celery Chopped
1 Green Bell Pepper Chopped
1 1/2 Tsp Dried Basil
1 1/2 Tsp Cajun Seasoning
1 Tsp Kosher Salt
1/2 Tsp Black Pepper
1/4 Tsp Cayenne Pepper
14.5 oz Can Diced Tomatoes
2 1/2 Cups Low Sodium Chicken Broth
1 1/4 Cup Long Grain White Rice

~Instructions~
In A Large Dutch Oven Add 1 Tbsp Oil Over Medium High Heat.
Once Oils Hot Add 1.5lbs Boneless Skinless Chicken Thighs Cut Into Bite Size Pieces.
Cook Chicken 2 1/2 Minutes Per Side To Get A Nice Browning Chicken Wont Be Cooked Through But Will Finish Cooking Later In The Recipe.
Once Browned Both Sides Pull Chicken Off Add To A Plate & Set Aside Repeat With All Your Chicken.
To The Same Same Pan You Cooked Your Chicken Add 1lb Andouille Sausage Cut Into 1/4" Slices & Cook Till Browned On Both Sides Then Add To The Plate With Your Chicken.
Reduce Heat To Medium Add 2 Tbsp Unsalted Butter & 2 Tbsp All Purpose Flour To The Same Pot As Chicken/Sausage Stir Well Scraping Any Brown Bits From The
Pan Then Add 1 Yellow Onion Chopped, 4 Cloves Garlic Minced, 3 Ribs Celery Chopped, 1 Green Bell Pepper Chopped Then Sautee For 3 Minutes.
Next Add 1 1/2 Tsp Dried Basil, 1 1/2 Tsp Cajun Seasoning, 1 Tsp Kosher Salt, 1/2 Tsp Black Pepper, 1 1/2 Tsp Cajun Seasoning & Mix Well To Combine Then Add 2 1/2 Cups Low Sodium Chicken Broth, 1 1/4 Cup Long Grain White Rice & Bring Mixture To A Gentle Boil.
Once At A Boil Add Back Your Chicken/ Sausage Reduce Heat Cover & Cook For 20 Minutes.
Remove From The Heat Rest With The Lid On For 10 Minutes Then Gently Fluff With A Fork & Rest Again 5 Minutes Before Serving.
*** Uncooked Shrimp Can Be Put In When The Rice Get Put In If You Want To Add 1lb Shrimp.
