Tasty Bitter gourd Theeyal in Kerala Style | Pavakka Theeyal Recipe

Ingredients
Bitter gourd - 3 nos
Shallots -20 to 25 nos
Tomatoes - 3nos
Tamarind - small ball
Grated coconut - 1 1/2 cup
Turmeric powder - 1 tsp
Dry red chilli - 4 to 5 nos
Coriander seed - 2 tsp
Pepper corns - 1 tsp
Garlic - 6 to 7 nos
Mustard seed - 1 tsp
Salt - 1 or 2 tsp
Oil - 5 to 6 tbsp
Method
First we have to cut and cleaned the bitter gourd
Then peel the shallots and set aside.
Then washed the shallots and tomatoes set aside.
chopped the tomatoes and set aside.
Then chopped the shallots and set aside.
Now cut the washed bitter gourd into round shape and keep aside.
Then grated the coconut and set aside.
Heat oil in a pan add dry red chilli .
Then add grated coconut, coriander seed ,pepper seed and garlic
Saute them well for few minutes.
Then add curry leaves ,saute and roasted them well till they become light golden brown.
Remove from fire and set aside.
Heat oil in a pan add bittergourd and fry them well.
Drain them well and set aside.
Then crush the roasted dry red chilli .
Then add roasted coconut and grind them well,set aside.
Heat oil in apan add shallots , chopped tomatoes ,saute them well.
Then add curry leaves and turmeric powder ,saute them well.
Add water into the grinded masala and mix them well.
Then pour the mixture in to cooking pan and mix them well.
Then add soaked tamarind water and salt ,mix them well.
Cover with a lid and cook them well .
Remove the lid and check the masala is well boiled.
Then add fried bitter gourd and mix them well.
Cook for few minutes.
Heat oil in a pan add mustard seed ,let them spluttered.
Add dry red chilli and saute and fry them well.
Add shallots and curry leaves ,saute and fry them well.
Remove from fire and pour the fried ingredients on the bitter gourd curry pan
Mix them well for few minutes.
Serve the tasty bitter gourd theeyal with steamed rice.
