🌼 Basant Panchmi Special Kesariya Meethe Chawal (Sweet Saffron Rice)
📝 Ingredients:
Basmati rice – 1½ cups
Cinnamon stick – 1 small piece
Bay leaf – 1
Green cardamom – 2–3
Ghee – 2 Tbs
Mixed dry fruits (cashews, almonds, raisins)
Sugar – ½ cup
Kesar Milk – ½ cup
Method
1: Wash the rice thoroughly 3–4 times and soak it in water for 30 minutes.
2: In boiling water add cinnamon, bay leaf, and green cardamom and soaked rice.
3: Cook until the rice is about 80% cooked.
4: Drain the rice using a strainer and keep it aside.
5: Heat ghee in a pan. Add dry fruits and saute until lightly golden.
6: Add sugar to the pan and cook on low heat.
7: Add saffron soaked in lukewarm milk and mix well.
8: Gently add the cooked rice and mix carefully so the grains remain intact.
9: Cover the pan and cook on low heat for 5 minutes, allowing the rice to absorb the saffron flavor and sweetness.
10: Switch off the heat and garnish with a few dry fruits if desired.
