Notes:
*Do not use garlic in this dish
*Do not use tomato paste in this dish
*Tone down your jollof rice ingredients
*Homemade coconut milk is a must!
*Bake slowly @ 375°F for a total of 65 minutes
*Bake vegetables @400°F for 45 minutes
Tips for using a stove top for this recipe:
1. Cook on very low heat
2. You may need to add more liquid to avoid burning. But be mindful of adding too much liquid
3. Cover with foil to trap the heat in the pot
Ingredients:
To parboil the rice:
*5 cups long-grain parboiled rice
2 cups homemade coconut milk (or a little more just to be on the same level with the rice)
¼ teaspoon chicken bouillon
*Salt to taste
To roast the vegetables:
*3 red bell peppers
*2 chili peppers
*1 habanero (for heat)
*1 red onion
*1 white onion
*4 tablespoons olive oil
*2 teaspoons oregano
*1 teaspoon thyme
*½ teaspoon rosemary
*1 teaspoon chicken bouillon
*Salt to taste
To Bake the rice:
1 cup meat stock
2 cups coconut milk
