Radish Fritters (Kuku):
Radishes – 10 medium
Potato – 1 medium
Onion – 1 medium
Eggs – 3
All-purpose flour – 2 tbsp
Chopped parsley – 2 tbsp
Salt and black pepper – to taste
Oil – for frying
Breaded Fried Radishes:
Radishes – 10 medium
All-purpose flour – as needed
Eggs – 2
Breadcrumbs – as needed
Oil – for frying
Radish Salad:
Radishes – 5
Fresh cilantro – 10 sprigs, chopped
Pomegranate molasses – 3 tbsp
Golpar (Persian hogweed powder) – 1 tbsp

Grated radishes are mixed with potato, onion, eggs, herbs, and flour, rested briefly, then fried into crisp, golden fritters. For extra crunch, sliced radishes are breaded and fried until perfectly crisp. A simple salad of fresh radish and herbs is finished with tangy pomegranate molasses and aromatic golpar, creating a beautiful balance of flavors on one table.
