SAMBAL SOTONG PEDAS 🌶️🌶️🌶️
SPICY CHILLI SQUID

Ingredients:
4 cleaned squids 🦑
1 tsp brown sugar
2-3 tbsp dry chilli paste 🌶️
1 fresh lime
Ikan bilis stock powder (anchovy stock powder)
Oyster sauce
Salt to taste
Oil for cooking
Little water 💧
Coarsely ground all these in a food processor/blender 👇👇👇
2 fresh red chillies
2 red onions
2 fresh lemongrass (inner white part)
4 cloves of garlic
6-7 mix of red & green cili padi
Steps:
Heat up a little oil. Cook the squids without any oil for 1 minute over low flame. This is to remove the excess water from the squid. Then, set it aside.
Now, heat up some oil and sauté the grounded ingredients for a minute. Keep the heat low/ medium-low.
Then, add in the dry chilli paste. Also a little oyster sauce, salt and stock powder. Add in a little water, 3-4 tbsp.
Add in the brown sugar, then the squids.
Cook for another 2 minutes or until squid is cooked.Squeeze some lime juice and turn off the flame.
Serve with hot rice and enjoy 😋😋👌
