Dreaming of curry ? Don't just dream anymore : our recipe is easy and more importantly, it doesn't require any special ingredient. You might already have all the ingredients on hand ! Wanna bet ?


INGREDIENTS :

• 4 large shallots
• 1 head of garlic
• 4 sprigs of parsley (or cilantro)
• 3 slices (10g) of fresh ginger
• the zest of one lemon
• 2 T of turmeric
• 2 ½ T of curry powder
• ¼ t of ground coriander
• a generous pinch of pepper
• a generous pinch of cayenne
• 1 t of salt


STEPS :

• Peel the shallots and clear the tops of every garlic cloves on the head
• Pour a trickle of oil on top and wrap in aluminium foil
• Bake in a preheated oven at 200C/400F for 45 minutes
• Put the parsley leaves in a blender along with the minced ginger and lemon zest
• Add all the spices
• Once cooled, add the shallots and the garlic cloves (yes, all the cloves)
• Blend and transfer to a clean airtight container


This paste is perfect for all curry recipes, soups and sauces, thinned out in coconut milk. It will add to your dishes an intense and unique flavor. Enjoy !
Keep fresh in your fridge from one to two weeks.
