I’m cooking a smoky, hearty moussaka outdoors over fire — layers of squash, green lentils and a creamy top bubbling away in cast iron. I used homemade chicken stock in this one (it was what I had in the freezer!), so it’s not vegetarian — but you can easily swap in veg stock for a properly veggie version.
One of those thrifty, comforting dishes that proves you can take proper kitchen classics outside and make them even better over flame.
