Here is the recipe:
681g/1.5lbs pork tenderloin
41g/1/3 cup all-purpose flour (tenderloin)
28g/ 2 tbsp. vegetable oil
4g/ 1 tsp. ground black pepper (tenderloin)
4g/ 1 tsp salt (tenderloin)
4g/ 1 tsp minced garlic
52g/1 cup white onions (diced)
50g/ ½ cup celery (sliced)
122g/ 1 cup carrots (diced)
14g/ 1 tbsp. tomato paste
8g/ 2 tsp dried thyme or two sprigs
4g/ 1 tsp rosemary or 1 sprig.
2 bay leaves
119ml/ ½ cup white wine
350ml/ 1.5 cups beef broth
118g/ 2/3 cup diced tomatoes.
210g/1.5 cups Russet potatoes (peeled and diced)
40g/ 2/3cup of green beans
Parsley for garnish
Preheat oven to 325F/163C
Cut tenderloin into large chunks then season with salt n pepper.
In a large bowl, dredge pork tenderloin in flour and set aside.
In a saucepan/ Dutch oven over medium-high heat.
Add olive oil until hot.
Add the pork tenderloin and sear (7-9 minutes) until brown on all sides.
Remove from heat and set aside.
In the same pan, over medium heat.
Add garlic, onions, carrots, and celery and sauté for 1 minute!
Add the tomato paste and combine.
Add white wine to the pan and deglaze the pan.
Add the beef broth, pork tenderloin, tomatoes, thyme, rosemary, and bay leaves then bring to a boil.
Then reduce to a simmer add the potatoes and green beans.
Add salt n pepper is needed/desired.
Cover pan with lid and place in oven.
Bake at 325F/163C degrees for 1 hour (ovens vary)
Ensure pork tenderloin and vegetables are tender.
Internal temperature for pork is 145F/63C.
Garnish with chopped parsley and serve.
