PRAWN BREYANI:
2& 1/2 cup rice
3/4 cup lentils
Par boil with cinnamon stick and elachi, little turmeric and salt to taste
Drain and keep aside
1kg prawns cleaned
1 & 1/2 heaped tsp crab and fish masala
1 & 1/2 heaped tsp kashmiri mix masala
Salt to taste
Marinate the prawns with the above ingredients and keep aside for 30 minutes
Fry in small batches
5 medium potatoes cut into halves and toss in egg yellow colouring and fry
CHUTNEY:
2 large onions
3 cinnamon sticks
3 bay leaves
Thyme
10 grated tomatoes
1 cup mint
1/2 cup dynia
1 tsp crab and fish masala
1 tsp kashmiri mix masala
1 tsp all in one breyani masala
1 tsp kashmiri chilli powder
1 tsp turmeric powder
Salt and sugar to taste
1 & 1/2 ginger garlic
Take 2 curry spoon of tomatoes and the mint, dynia and blend till fine
Method:
In a pot add oil and fry whole spices, thyme, and onion till golden brown
Add ginger garlic and fry for a minute
Add the mint paste and add all the spices and braise for a minute
Add the tomatoes and salt and sugar to taste
Cook on medium to low for 20 minutes
Layer breyani starting with rice, lentils, prawns ,potatoes, chutney and repeat
Garnish with coriander and mint and simmer on lowest heat for 15 minutes
