Recipe
3 Cups / 16 ounces / 1 LB dry pinto beans
+7 cups of water/chicken stock/water and bullion.
Various pork products - cut-up pork, bacon, hotdogs, cooked ham, chorizo, sausage, etc.
Two tomatoes, diced or 19 oz can of diced tomatoes
1/2 bunch of cilantro, chopped - stems, and leaves
1/2 any onion, diced,
Jalapeño, sliced
Chipotle pepper
1 to 2 garlic cloves, finely chopped
Spices:
1 TBSP Oregano
1 TBSP paprika
1 TBSP cumin
2 tsp. black pepper
1 tsp. salt.
Fry the bacon, add onion, and jalapeño - fry for one minute add the garlic, and as soon as, the garlic starts to release its fragrance add the tomatoes to capture the garlic flavour.
Cook on high for 4 hours in the slow cooker. Add the chopped cilantro and salt.
(Can also soak beans overnight, and cook on low....go to work - should be done when you get home (8 hours or so)
