Curry Pasta with ground beef
Cook the pasta to just slightly under Al Dante and set aside (strained) as it will be cooked further in the sauce

While water is heating for the pasta, marinate the meat
1 LB ground beef, add
1 TBSP Curry power
1 tsp Soya Sauce
¼ tsp black pepper
½ inch ginger – minced (or ¼ tsp ground ginger)

Curry Sauce (note, could be made with just curry powder, salt/pepper, and butter/oil)
For each 375 g package of pasta add
In a heated pan – 1/3 Cup Butter / Oil / Coconut Oil (high heat)
Add
1½ to 2½ TBSP of curry powder (cook for a minute or two just the curry in the oil turning it down to just above med. heat).
Then add diced Onion, then add
½ tsp turmeric
1 tsp of masala
½ tsp of salt
¼ tsp black pepper
1 tsp crushed garlic (or ¼ tsp garlic powder)
When onions are cooked add the meat
Cook for about 5 mins,
add either (1/3-1/2 can of coconut milk OR 1/3-1/2 cup of the reserved pasta water (if the pasta water is down the drain – use water or milk.
Cook for another 1-2 minutes (taste for seasoning) – if more spice needs to be added, correct to your taste here. If adding more spice (esp. curry, either cook the curry in a small saucepan in a little oil for 1-2 mins and add to sauce OR add to pot and cook for 5 minutes on above-med heat.
Let sit with the lid on, with the heat off, for a couple of minutes.
Integrate the pasta into the sauce and serve.
