Best Chanterelles Mushroom Recipe

Our favoirte family recipe and probably one of the best methods out there for cooking Chanterelles and other wild mushrooms. This works for other mushrooms as well and there is nothing better then serving these next to a delicious steak or a pork-chop. So enjoy Oma's awesome Chanterelle recipe, its a family tradition.
Omas Cooked Chanterelles recipe:
Prep all ingredients first
2-3 tablespoons oil
4 tablespoon onion chopped
2 tsp chopped garlic
1 tablespoon cornstarch mixed with 4 tablespoons of water
6 cups chantrelles
1 teaspoon of thyme
4 Tablespoons minced onions
1 teaspoons dash
1/2 teaspoon salt
1 tablespoon sour cream
1/4 teaspoon turmeric
1/2 teaspoon black pepper
1-2 tablespoon white cooking wine/water if needed
1/2 teaspoon parsley
Directions:
1.Heat oil to high heat.
2. Add minced onions, fry on high heat for 1-2 minutes.
3. Add minced garlic, cook for 30 seconds more
4. Then add 6 cups of fresh chanterelles and the thyme, fry
mushrooms while stirring.
5. Add dash, reduce heat to medium high and continue to cook
uncovered. When mushrooms start to release their liquid cover them with a lid
and cook for an additional 30 seconds.
6. Remove lid, add salt, stir mushrooms, cover again and
cook 1 minute.
7. Uncover pan and remove from heat/burner.
8. Separate and/or push mushrooms to one side of the pan and stir the water/cornstarch
mixture into the liquid in the pan and stir at 1 teaspoon intervals until mixture thickens.
Place pan back onto burner/heat.
9. Continue to stir everything in the pan until mushrooms and liquid starts
to thicken.
10. Once thickened, add sour cream to the mushrooms. Also add turmeric, black pepper and
white cooking wine or water but only if the if mushrooms mix is to thick.
11. Cook 2-3 more minutes, add a pinch of parsley, serve and enjoy or freeze them
at this point and save em for a special occasion.
Note: If the mushroom/sauce is not thick enough add a little more cornstarch
mixture in small amounts (1 teaspoon) until desired consistency is
attained. On the other hand, if the mixture is too thick add more wine or water in small
doses (again one teaspoon at a time).
