INGREDIENTS - Serves 4-5

CHANA MASAL
Half a cup of ghee (some reserved for the tadka)
Three medium onions, finely chopped
Finely chopped ginger, two inches (one inch squared)
One bulb of garlic, finely chopped
One teaspoon salt
One teaspoon turmeric
One teaspoon amchur (dried mango powder)
One teaspoon Kashmiri chilli powder
One teaspoon cumin powder
One tablespoon coriander powder
One teaspoon Chana Masala powder (any brand you like)
One litre of blended tomatoes (or two cartons of passata)
TARKA
Remaining ghee for the tadka
Juliennes of ginger (about 10 sticks)
Six green chillies
One teaspoon smoked paprika
Fresh coriander, to garnish
Pickled red onions, to garnish
