DRY TOM YUM LAMB STIR-FRY

Ingredients:
500gm lamb steak, cut into bite size
2 tbsp Mae Pranom Thai chilli paste
2 heaped tbsp Tom yum paste
½ tsp palm sugar/regular sugar
2 cloves of garlic minced
5 shallots + 4 kaffir lime leaves, crushed
3 stalks of lemongrass, minced (the inner white part)
Coarsely grounded black pepper
1 tbsp fish sauce
1 tbsp oyster sauce
1 tbsp light soy sauce
½ - 1 lime (juice)
Red cili padi, chopped
Handful of green cili padi
4-5 kaffir lime leaves, julienned
Water (3 tbsp)
Oil for cooking
Method:
Heat up some oil in a wok, then add in the shallots-lime leaves, garlic, lemongrass, saute for a minute, then add in the lamb. Keep the flame to medium. Keep it covered, cook for 5 minutes.
Now add in the tom yum and thai chilli paste, fish and oyster sauce, water and continue to cook the meat for 5-6 minutes. Then, remove all the kaffir lime leaves and some of the excess oil.
Bring down the flame. Add sugar, as little as possible, soy sauce and check if meat is cooked. Check for seasoning as well.
Now, turn off the flame and add in the remaining ingredients/spices like the black pepper powder, red and green cili padi, julienned kaffir leaves and squeeze ½ - 1 lime according to your preference. Enjoy!
