Sushi Rice Base (Donburi Style)
Mayumi starts with hot Japanese rice and turns it into simple sushi rice for the base of the bowl.
Hot cooked rice (gohan)
Seasoned rice vinegar (or rice vinegar + sugar)
Method:
1. While the rice is still hot, gently fold in seasoned rice vinegar.
2. Let it sit so the vinegar absorbs and the rice cools slightly.
3. Taste and adjust – you want lightly seasoned, slightly sweet‑tangy rice.
Good sushi starts with good sushi rice, even for a quick home donburi.

Maguro (Tuna) – Cooked Donburi Style
Instead of raw sashimi, Mayumi uses tuna that is cooked and seasoned for a comforting rice bowl.
Important note from Mayumi:
Only eat fish raw if it is clearly labeled “sashimi grade.” If it’s not sashimi grade, cook it.
Fresh tuna (maguro), not sashimi grade, cut into bite‑size pieces
Neutral oil
A splash of sake or white wine
Dashi or noodle‑soup style seasoning (or similar Japanese soup base)
Sugar (a little)
Soy sauce
Bonito flakes (katsuobushi)
Method:
1. Cut tuna into small, easy‑to‑eat pieces.
2. In a pan with a little oil, quickly cook the tuna over medium heat.
3. Add a splash of sake or white wine to remove any smell and add flavor.
4. Season with noodle‑soup base, a little sugar, and soy sauce.
5. Stir in moistened bonito flakes to bring in deep Japanese umami.
6. Cook just until the tuna is done but still tender – don’t overcook or it will get tough.
